Why do many religious believers accept self-defence as a reason for war?

Answer

Because a country attacked by another has a duty to protect its innocent citizens, and defending life is seen as different from starting violence.

Why

Most Christians and Muslims accept defensive war. The Qur'an permits fighting those who fight you but forbids aggression (Qur'an 2:190). Pacifists disagree, holding that even defensive war causes more harm than it prevents.

Which Jewish belief is summed up by the words 'the Lord is One'?

Answer

Monotheism: Jews believe there is only one God, indivisible, with no partner and no physical form.

Why

The line comes from the Shema (Deuteronomy 6:4). Because God is One, most Jews avoid images of God altogether, and worship of anything else counts as idolatry.

What is risalah in Islam?

Answer

Risalah is prophethood: the channel through which Allah communicates with humanity by sending prophets with a message.

Why

Muslims believe prophets were sent to every community. Nabi is usually used for a prophet and rasul for a messenger given a book. Shi'a Muslims list this belief as Nubuwwah.
